Russian Beet Salad

Beets are our friends. Just ask Dr. Oz. Filled with anti-oxidants, this mega-health food will also nourish the Russian soul… as well as kill you with cholesterol once you slather liberal amounts of mayo all over the red root vegetables.

Beets figure prominently in Eastern European recipes which is probably why all their babushkas are living to such ripe old ages. It’s a well-hidden medical mystery, but a bowl of borsh a day will let you live to 120.

Here’s an easy-peasy beet salad that anyone can make in 15 minutes or less. The ingredients are: 2 cans of cooked beets (pickled or not), one pound of potato salad (purchased or homemade), 4 boiled eggs, tons of diced garlic, and mountains of mayo. Depending on your own tastes, you may also add diced kosher dill pickles, and/or sausage, and/or peas… or any other scraps or leftovers you deem “too good” to give to the dog. (Sorry, Misha and Grisha-!)

Chop it all up, mix it all together, and voila`: Russian Beet Salad.

(We once had a Russian babysitter who polished off the whole bowl, so it must be good….)
